I just acquired a G2 iPhone....

I just acquired a G2 iPhone, the person I got it from had 3.1 on it
and he downgraded to 3.0 (unlocked & jailbroken) but I need to
restore the phone. Can I restore it with 3.0, unlock and jailbreak it the
same way as if 3.1 was never installed? Hope I made sense...
I still have iTunes 8.2 installed on my pc.

From what I understand is the baseband changes, so if you upgraded to 3.1 it will change the baseband and even if you downgrade, the baseband will still be the higher version baseband, so it won't be unlockable. Jailbreak, yes, unlock, no.

The only way to get around that is if he had stopped the baseband update through pwnagetool. if he didnt upgrade the baseband (you can tell this if your modem firmware is somthing other than 5.11.07, he did not upgrade the baseband) then you can restore to a virgin 3.0 (Un-Pwned firmware) and then JB w/ redsn0w, and Unlock with UltraSn0w. It should work.
