Let me just make sure I got it right... My unlocked, jailbroken 2G/2.2 firmware iPhone has been acting up (crashing etc) and I want to fix it. All I need to do is:

1. Ensure I have iTunes updated (8.0.2)
2. Plug in iPhone
2. Hit the Restore
3. Follow the Restore steps
4. Phone is now locked again and back to factory settings
5. Re-unlock/Jailbreak it using these steps iClarified - iPhone - How to Unlock/Jailbreak Your 2.x.x 2G iPhone Using QuickPwn (Windows)

*Once this is done it should now be freshly unlocked/jailbroken have updated to 2.2.1

Please let me know how far off I am before I turn my iPhone into an iPod.

Pretty straight forward honestly but yes. If it does not work it's your setup or user error. Plain and simple.
