One Computer, Two iTunes Accounts?

Sorry if this has been posted a million times before, but I couldn't find the answer. I have an iTunes account with my whole collection of songs, shows, apps, etc. I don't have an iPhone or iPod Touch right now, but I have in the past, so my iTunes still has those apps synced to it. I do still have an iPod Classic, though. Anyway, here's my question:

My step-daughter is getting an iPod Touch. We have one usable computer right now, which is the one with my iTunes on it. We want to set up a new account through my wife's email address so she can control what goes on the iPod. So can we have multiple iTunes accounts on one computer, or can we only use mine?

Set up an entire user profile for her on the computer... and when she loads up iTunes, it will set up a library unique to the user profile on the computer - then she can use her own iTunes account info.
