I'm wondering if the music I search for and 'add to my music' on Apple Music, remains mine for life.

The only way anything is "yours for life" is a purchase from the iTunes Store... With Music as a service, you get use of things while you pay the monthly fee. Quit paying that, you're back to your "purchased" music library.
