Angry Birds is a must-have.
If you have an iPhone4, I'd strongly recommend Carcassone. It's optimized for the retina display and the screens and game pieces are gorgeous.
Real Racing on the iPhone4 is almost better than Real Racing HD on the iPad.

N.O.V.A.!!!!!!!!!!!!!! COD zombies 1 and 2, Rolando, doodle jump, pocket god, nfs shift, spore creatures, prince of persia warrior within, angry birds and ROCK BAND!

Those are all my favourites, i do a LOT of gaming on my ipod touch and have a folder just for these games here....ive started playing assassins creed and its also reallly good!
