I tried Dolphin but hated the interface. I've tried Opera, and hated it on the Blackberry and hate it even more on the iPhone.

My day-to-day browser is Atomic Web Browser... but still use Safari when the need is there.

Since downloading the jailbroken tweak "Full screen Safari", Safari has now become my primary browser. If I need to view videos that require flash I use Skyfire temporarily.

I've tried Opera and Skyfire, but I always seem to go back to Safari. It just works, and it works well.

Just my 2 cents.

I use Safari if I want to look up something real quick.
I use Atomic Web Browser if I want to surf for a while & use tabbed browsing.
