I don't think you can... unless at the Apple Store, you reserved through the carrier at AT&T. It's what I did (online) I ordered the phone for delivery via Apple (not AT&T) and they allowed me to pick the next plan.

I haven't found any stores that has the iPhone 7 that I want with my carrier. Is your best bet to order online & have it shipped to store or your home?
