Here's my list of what to do.....tell me if I'm wrong or missing something - please!

UPDATE IOS IF NEEDED ON OLD PHONE
UNPAIR WATCH (WHICH ALSO BACKS UP)
BACKUP OLD PHONE TO ICLOUD
SET UP NEW PHONE WITH RESTORE FROM ICLOUD BACKUP
PAIR WATCH WITH NEW PHONE

DELETE OLD IPHONE FROM ICLOUD (seems like I read that somewhere)
Do I need to do anything with Apple? Or does erasing all content and settings do that?

I get so nervous when I have to do this, but it will be worth it - LOL

Thanks in advance.

Once you are satisfied that the new one is working properly and has all your data and you've unlinked it from your Apple ID, do a restore as new on the old one.

depending on how long you had your old phone and howmany updates it had. It might be worth consideren not installi the new phone from backup but just set it up as new.
You ca backup to itunes if you have a lot of apps that you want on your new phone so you ca easily install them.

No reason to be nervous. Just make sure you have a backup, either iCloud or iTunes. I generally do both, just to be safe.

If you use iCloud Keychain, resetting all network settings deletes every single saved Wi-Fi network you might have. If you have a lot of saved networks, you are making more work for yourself later on because you will have to set them up again. I find it extremely convenient that when I'm at a friend or relative's house, my Mac, iPhone & iPad connect to their network automatically because I've connected to it in the past with one of those devices.
