Is it possible to play music through my iphone 6s, so that the person I am calling can hear it?

I am looking for a way to play something for the person on the receiving end that sounds high quality.

Welcome to iMore! Nope. iOS doesn't support multiple audio channels so any music will automatically mute during a phone call.
