I would like to turn off auto-rotate, how can I do this?

Enable the Rotation Lock. Slide up from the bottom of your screen to get to the Control Center and tap the icon in the top row, far right. The center of the icon, when active, will be white. You will also see the Rotation Lock icon on the menu bar - that icon is a circular arrow around a padlock.
