Welcome to iMore! If the web site you're adding to your home screen generates an icon then it will be added to the shortcut. If it doesn't, a screencap of the web page will be added to the shortcut. Unfortunately this isn't customizable by the user without jailbreaking.
For example, Google added its logo when I created a home screen shortcut but KnightCite did not (see image below).

I do too! Tiny screencaps of web pages are both ugly and useless on my home screen.

Sometimes while still in Safari, you can zoom up a tab before setting it as a bookmarklet. I did this one of an iMore page. It's the logo in the top left of the page.

IOS 8 added the white part at the bottom.
