Is there a way to force the shutter speed to slow down and increase the f\stop for more depth of field? I notice that my pics are all at very high shutter speeds and the lens is almost always wide open.

many 3rd party camera apps give you some options for those adjustments... check them out in the AppStore.

Take a look at 645 Pro Mk II.

My father is a shutterbug, and he found a review in one of his photography journals. You can control everything that can be controlled including ISO and shutter-speed readings.
