I just got a brand new iPhone 5. When I go to setting>general>about>name, it says "Lori's iPhone". I don't remember seeing other people's name when I got iPhone 4. is that how a new iPhone shipped now? I wonder why Apple does that?

No, I am the only one use my iTunes account.

If that's how it was right out of the box, I'd connect it to iTunes
and do a restore as new.

It's possible it's a similar scenario to when people get iPhones with pictures of the people putting it together on it...testing and what not. Who knows...if it's working properly just go with it! Start calling it Lori instead of Siri...maybe it's magic.
