how do you backup your iphone data when "setting up as new phone"

My iphone needs to be restarted 2-3 times a day so I did a backup-restore, and it's better. Now it's going a full day before programs randomly shut down, and don't work. I want to do a full wipe.

The problem is I need to backup my data and I can't figure out how:

I figured out I can backup contacts to Windows Contacts, and bookmarks to Internet Explorer.

I can not figure out how to back up notes.

I wish there was a way to backup everything to the same spot (notes, calanders, contacts). I know outlook express used to work in XP, but Windows 7 has windows live mail.

1. Is there a way to copy off all my notes, in a way that will be easy to copy them back on after I set up my new phone.
2. Is there a free program that can sync all your data with itunes?

1. Other than emailing all of your notes to yourself, no, although I think outlook DOES sync with notes in Windows 7.
2. I doubt it. To be honest 90% of what you'll find is malware or a useless trial.
