iPhone Backup iOS4

Hey guys when i upgraded my iPhone to iOS4, i lost all my messages etc.. and when i go to restore it, i can't find a good date to restore to, like there is a list of about 5 different backups, is there anyway i can find a backup for another day, or even month.

As far as I know, you can only backup with what iTunes offered .. honestly, I didn't even know that you could choose from dates, I thought it always just backed up with the last restore.
