Can anyone shed some light on how to get photos I take with my iPhone 3GS onto my laptop and also how to organize my photos on my phone into folders?
I've moved photos from my laptop onto my iPhone but can't seem to figure out how to move them the opposite way.

1.My Computer>Apple iPhone And import the photos on your computer
2.My Pictures>Right Click>New>Folder
3. Drag the pictures into folders that you want them in.
4.iTunes>Devices>iPhone>Photos>Check Sync Photos>Pick were you are syncing your photos from.
5.Selected folders>Check folders you want.

Since you're specificially saying laptop, I'm gonna run with the idea that you're using a Windows machine.
When you plug your iPhone into your laptop, it will appear as another drive. (On my laptop is shows as drive F with the name I gave it.) Open it up, then open up the DCIM folder and you'll see everything on your camera roll. You can then copy or move them to a folder on your laptop, or even delete them.
