My wife was on her Macbook deleting her gmail Trash items when she noticed that the handful of Notes on her iPad were also deleted. Her gmail is linked to the iPad but I can't figure out why all her notes from the iPad Notes app were deleted?? The notes showed up in her gmail trash, so she copy + pasted them back to the Notes app, but this is very odd to me. Are the Notes app & iPad mail app somehow linked?? how can I unlink them?

Yes, notes are synced to some kind of exchange account like MobileMe/iCloud or gmail. So if you delete them on the computer, they delete off your device. You can try to unsync them by going to settings-mail-select gmail account-turn off notes
