As long as you don't reply to spam or try to unsubscribe from spam, you'll be fine.

Well, you received a lot of answers but I wouldn't be so sure, nowadays. As a general rule, iOS couldn't be infected by malware via mail, but as its popularity grow among users, new and more sophisticated malware appears. Try to avoid to click on ANY link in suspected mails and surely NEVER insert the administrator password/code if requested (fortunately on iOS most of the malware still require user action to be installed).
