When my 6S Plus is locked sometimes when I put my finger on the fingerprint reader it launches the cards I have in Wallet. Anyone no why and how I stop it from launching?

Stop pressing the Home button twice in succession, perhaps? That's what is launching it.

Otherwise, go to Settings > Wallet & Apple Pay and turn that setting off under "Allow Access when Locked"..
