As the title states, I am now having to confirm deletion of email on my iPhone 5 running iOS 8.1.1

This is not an issue on my iPad running the same iOS version and all email accounts are set up the same way on both devices.

Any ideas why this is happening on just my phone?

Somewhat OT, but when will they give us mass delete of mail in the Apple email app? Am I really the only one that is being driven nuts by this?

Do you mean selecting various emails through the list and deleting them all at once? You can do that now.
Let's say I have 200 emails on my phone. To delete all of them, I have to go to EDIT, select them one by one and hit trash. Then, I can go into the trash folder and there is a button to DELETE ALL. I want a delete all or move all to trash button in the original mail folder.
