iOS 7 and itunes beta question

I have ios 7 GM installed as well as itunes beta so Im able to backup. My question is can I restore my iphone and then restore it to today with ios 7 etc or should I wait for the public release?

Do you have a specific need to do a backup and restore?

I have a few apps that I need to start new on. I was always able to restore and start new on ios 6
