    If my UDID is registered on a developers account would it be safe for me to install the 5.0.1 beta on my iPhone 4 with iOS 5?

    If your phone is also registered under that UDID, yes - it's safe.

    I had a registered iphone 4, sold it and bought the iphone 4s.
    Anyone know how to update my UDID or add my new UDID to my developers account?

    Just go to the appropriate screen and add it. It's not "rocket surgery".
