Default Wireless sync vs iCloud (pick one or another?) - GRIPE

After 4 tries last night, I finally have iOS 5 on both my iPhone 4 and iPad 2

Only huge issue I have now is that iTunes makes you pick either back up through iCloud or iTunes..why can't I separate the two or use a combo or both? Meaning I'd like to have iCloud back up all my stuff (esp apps as I have tons and it takes up a lot of room on my mac - I'm running out of HD space, and I need a new external HD which I will remedy) ....BUT I'd still like to wirelessly be able to sync, say, just certain music playlists and/or videos.

It doesn't seem to allow me to do this.

When I attempted to wirelessly sync (after a successful iCloud back up) - all the apps from my phone ended up on my mac again) - so frustrating. Why is it one or another?

    Does anyone have a solution????
