Not talking a minor bug fix here, like iOS 5.0.x will likely be, or a decent upgrade like iOS 5.2 might be if it ships with a new iPad this spring -- just a minor update this January or whenever iOS 5.1 is let loose.
Apple hasn't even started a Beta yet, so who knows when that will be, and seeing how last x.1 releases have only introduced things like iTunes Wi-Fi store, Genius for Music, and Genius for Apps, I'm not getting my hopes up... but...
- Photo Stream deleting individual apps
- Option to disable the double-click camera lockscreen bypass
- Panoramic photos (if the code's still in there)
- Settings access for Siri (Bluetooth, off!)
I would love to see them add the ability to have different email signatures per email account. This is the only thing I seem to really miss from my Blackberry.
The other thing on that same note would be if they could add the options to sync group contact lists. Currently there are only mediocre programs available to accomplish this and most don't work with Exchange.
And of course a desktop component to that, so we can just drop files in either platform, and have the files show up everywhere. And I don't really care if Apple does it or a 3rd party dev, but I need that feature BADLY.

-focking Locational services for places outside US. id like to ask it where the nearest starbucks is etc
-better raise to speak recognition, sometimes, it doesnt recognise my phone is next to my face.

While not a permanent fix....can't you just create a keyboard shortcut and have it write a signature.
For example xyz would be one signature, mno would be another....
