How do I add another iCloud email address?

Am trying to reset my Apple ID and get rid of an old primary email address. Need a new address to use for an backup for all my stuff. Everything keeps sending verification emails to an account that I can't access.

Per Apple:

Your primary email address is also the contact email address for your account. Check your primary email address regularly because it receives email that you need to manage your Apple ID account. Before you can use a new or updated Apple ID, you need to verify it as directed in a verification email that Apple sends to that address.
