I'm new to iOS and was wondering if I need to have both gmail and exchange for my email. I'm getting 2 copies of each email because I have 2 of the same inbox.

Exchange isn't "email" it's a delievery system. So no you can delete the non-exchange Gmail account, which is setup with IMAP by default.

Nope, you only need one! Personally, I prefer set up through exchange because I find that I get them pushed immediately.

i actually setup my mail and calendar through the gmail account setup, and then my gmail contacts through the gmail exchange account (m.google.com) setup method... simply because contacts aren't a sync option under the regular gmail acccount setup...

i have found though the email portion to work a bit smoother with the regular gmail account rather than through the exchange method... despite being pull, not true push...
