I've seen a lot of talk about VPN's does private browsing offer the same security or is it literally just hiding my data on that particular device?

    many thanks

Private browsing is more or less just hiding your data on that particular device and certainly doesn't offer the same level of security as using a good VPN.

Per Apple: Private Browsing protects your private information and blocks some websites from tracking your search behavior. Safari won't remember the pages you visit, your search history, or your AutoFill information.
