Under Sources in my iPhone's Health app I find multiple "Robert's Apple Watch in the list of devices. Only the bottom one is current. The top three say "No longer paired . . ." I just added "Series 2" to the name of my watch for clarity (I previously had an original watch. Is the any way to edit this list? Only option seems to be "Delete all data fro watch" which is scary. Should I keep this old data for some cumulative health reasons?

It does not hurt anything to keep them. If you remove them then the data they wrote to the Health app will be removed as well.
