Hi, What cable or adapter can I use to connect a Late 2016 Macbook Pro with an LG 27UD68 monitor at 4K/60? It looks tricky via Thunderbolt 3 (USB-C) to DisplayPort 1.2...

I heard there was an issue with the chip inside the dongle to have full Thunderbolt 3/DisplayPort 1.2 compatibility.

Depending on the cord you use that dongle should work. Yes there IS an issue, read that article I posted. Apple has limited the device to 30Hz BUT that article tells you how to tweak your device and enable 60Hz. It's not the dongle, it's the computer, but it can be handled, read that article!
