I would like to remove some of the apps on my iPhone desktop and replace them with a cleaner look - a time and weather widget? Am I able to do this?

If you mean in the manner that you can with an Android device then no. Then again, it's probably possible if the device is jailbroken.

Also from the pull down menu, scroll to the bottom and click EDIT. From here you can edit/remove some widgets...

It is only possible to do this on Android unless you have a jailbroken device. Your next best option is to use the weather widget in the NC. To do this, simply tap edit on your NC Pane and add 'Today Summary' or 'Tomorrow Summary'
