When I hold down an app to delete it, I only get a

Not able to delete app. When pressed, only get "share" option - not the shaking delete option.

I had that happen too, and discovered that I was pressing down too hard. Instead, just touch the app you want to delete without pressing down, and the apps should all start to wiggle and you should then be able to delete the app.

Yes, don't PRESS the icon. LIGHTLY rest your finger on the icon until it starts to wiggle.
