All calls I make on my IPhone appear on my wife's iPhone calls made and vice versus

More than likely, you're both signed in to your devices using the same Apple ID and passcode.

my wife and I share an iTunes account. go to settings/Phone and turn off "calls on other devices" and go to Settings/General/handoff and turn off "Handoff".
