we want to put lures on some events but as they last 30mins and the event is 3 hours would that mean staying there - or going back every 30 min? Is there a way to have lures run one after the other?

Sadly, not at the moment as the PokeStops are in their simplest forms. You'll have to go back every 30 mins to put in a new one. If it's a big event with a lot of PoGo players, though, some of the other players might set some up once it's over. Saving you some time.
