my friends iphone 5c has been dying really quickly and it froze when she hard reset it

my friends iphone is frozen on what im guessing is the erase all content and settings screen (based on youtube videos ive watched to try and fix it for her while shes at work) but no matter what i do i can't find a way to unfreeze it without losing all her content and settings, it has all her baby sisters pictures on there and im not sure if she has anything backed up by the cloud or not.

What happens if you plug it into iTunes? Will it backup that way?
