How can I enter my iCloud account name?

I have an old iPhione 3s, running iOS 6.1.6. I can't work out how to change the iCloud ID, although I've succeeded in updating my Apple iTunes ID.

My objective is to be write a Note on either my iPad iOS 8.3, this iPhone (iOS 6.1.6) or the Mac Mini, and have it synchronize across all three machines.

There must be some kind of trick, but I haven't found it, after 5 hours of trying.

Can you sign out of iCloud under settings->iCloud then click on the register link?
