If I downgrade my cable and lose a channel, will I still be able to watch it on Apple TV?

I just downgraded my TV service and removed Disney Junior, now when I go into my Apple TV and try to turn a program on for the kids it gives me an error. Is this just a coincidence or do I have to subscribe to the channel in order to watch the channel on Apple TV?

What error does it give you?

Some services require that you subscribe to them on cable in order to get access to their streaming services.

You should contact their customer service and ask.

If the 'channels you mentioned' are no longer a part of your cable/satellite tv package then you will have to subscribe to them in order to watch those channels on your TV.
