Because at some point, someone who had access to your phone activated Siri and said, "Call me Simon"... to fix it, check your contact info in the Contacts app - scroll through and see if there's a Nickname of Simon listed.. if so, edit the contact info and delete the nickname. Or... activate Siri and tell Siri to call you what you want to be called.

I find Siri to be very accurate
