I can take photos but don't know how to back up!!

Hi, a total useless mac/iphone user here. I have precious pictures and videos in old iphones of my now deceased grandma dating back 3-5 years (3 different phones so i think from iphone 3 and onwards) Now I would like to back up but obviously the updates haven't been done and I am afraid to do it. What's the best option for me? I am considering getting a fresh start with a new mac and then try upload all the pictures and videos via image capture- can i do this with different iphones or is that going to create problems. Please help!!

Do the phones still come on? Battery? If there's power, you could transfer the photos via email. About how many photos are there? You can put up to 20 photos on one email. Maybe someone else has a better way.
If they are backed up to iCloud, you can access them in iCloud on the computer. But you need her Apple ID.
