What happens when I remove attachments from an email in Mac Mail?

I have recently switched from using GMail to Mac Mail to take advantage of the Remove Attachments feature. I still want to use my Google labels, though, which appear as Mailboxes in Mac Mail. When I delete the attachments from emails, though, it seems to remove the label information and move the email to All Mail.

Personally, I do not know because I do not have a Gmail account. Hopefully, someone who has configured their Gmail account via the Mail app on their Mac computer will respond soon.
