how do I remove old email details from my apple hardware

how do I sign into icloud, when it is asking me to sign in with the password for an email address that no longer exists. The email account in question stopped facilities for users some two years ago. I want to clear any reference to the old email account from my ipad, iphone etc. and sign in and sign up with my new email. Currently I am unable to have access to icloud or use any of the cloud facilities.

If you're using a defunct email address as an AppleID it should still work as your AppleID... And the password you've been using should still work... If not, password recovery options are available.
