All the apps should be agnostic as to what hand is doing the writing... some apps may be better than others... check AppStore reviews.

Most writing in Notes apps are done with a keyboard. I don't know of a left handed keyboard. What exactly do you need to do left handed that you can't do in the Notes apps?
