How does iMessage work?

I sent a text to a number, got a response (via imessage) but it was showing from the persons email address. If I reply, will this go to the email address and phone number? I'm paranoid the message wasn't seen on their phone!! Thanks.

That's happened a lot on iOS 8. The other person needs to go to Settings >Messsges>Send and Receive > uncheck all email addresses on the top part as well as bottom.
