How do I keep my music on my phone, iPad?

My music does not appear to be downloaded onto my device anymore, and therefore I am unable to play my music (as I can't download it when out of the house/in the car etc).

I have WiFi at home, but not out! I do not want to download when away from home. I am going abroad for Christmas and I want access to my music and films on the move. How do I do this!
