Why does iMessage keep turning itself off?

I don't know. Have you considering the following:

• Disabling iMessage and then re-enabling it.
• Rebooting your device.
• Upgrading to the latest iOS version.
• Going to Settings - General - Reset and then select "Reset All Settings".
• Restoring your device and then setting it up as new.

I was having the same problem with my sons 5c. Did everything mentioned above and still same problem. Took it in to apple and they swapped it for a new one.
