How do I use the selection of symbols showing when I use my emoji's?

The last emoji selection on the right

When it is selected, it has some buttons with four choices: one with all caps, one lower case, one with 4 symbols showing, etc. How are these used? Thank you

I imagine it illustrates a particular context. I've never even hit that. Just did and I don't think I'd ever use them.
Perhaps devs use them as illustrations?
