I heard that you cannot delete email, only archive.

That would depend on the email company. For example, Gmail archives, Yahoo deletes, etc. nonetheless all the emails remain on the server so if you go on your computer the emails will still be there, unless your device is managed through an MDM like BES and syncs that way.

You can go into the archived folder and delete, but that's the an extra step...

So, it all depends on the email client?

I use Outlook for my main email client. Would I be able to delete read email's?

Configuring Gmail to give you the options for archive and/or delete is pretty simple.

Gmail sends to trash, where it is deleted. It's set in settings either way you want it.

No, it is not true. Depending on how you have the mail or the mail service set up, deleting email, especially from the inbox, may initially go to a trash folder or be archived. This is a safety feature just in case you deleted the email(s) by mistake. However, once it is deleted from the Trash folder or the Archive folder or other similar folder, it is then gone for good.
