Black and white photo's

I've recently discovered that when applying the black and white filter to a photo doesn't make the photo permanently black and white. My son was required to take black and white photos for his photography class. We transferred them all (about 100 photo's) from his phone to our computer only to discover they were all in color. Is there a way to take photos on an iPhone that are permanently black and white?

Maybe he didn't save them after applying the filter. I've applied many black and white filters with Snapseed, usually, since it's my go to editor and why i copy them back to my computer they are all black and white.

Is there a certain procedure for saving photos in b & w so they appear that way even when the photos are transferred to your pc?
