Sync music to be stored locally on the iPhone, NOT in the cloud

After upgrading from IOS 6 to 7.1, I find that 100% of my music is now stored NOT on my phone, but in the cloud. iTunes is still configured to "sync" my music selections but these settings are apparently ignored. None of my ripped CD content is synched to the phone at all. And everything I've ever purchased from the iTunes store, including stuff I'd rather not sync to my iPhone, is "available" on my iPhone, but with a cloud icon. Thus, I have to download or stream it to listen to it, which means I have to be connected (i.e. not on a plane, not in a dead spot), which further means I have to use my data plan if I'm not around Wi-Fi!

So, how do I actually sync the music to my phone, so that it is stored locally on the phone--like it used to be--with no dependencies on bandwidth or the cloud?

Start by going into iTunes and make sure you have music syncing off so that whatever you choose in your library when you sync to your phone will only go to your phone and nowhere else.

UPDATE:
This is a way you can remove your music from iCloud.
