Unfortunately you can't at the moment as there is no jailbreak available for iOS 7.1.

Keep an eye on Evasi0n as I think they will be the first and probably most successful of all the jailbreakers to do it (if they do it).

Welcome to iMore an downgrading your 5C from 7.1 isn't possible. You'll have to wait for a jailbreak for 7.1 to be released.
