Is there a way to disconnect from iCloud without retiring my Mac machinery?

I am possibly the only person who does not want an iCloud account. I don't understand iCloud but I suspect it tracks everything I type in the pursuit of my unlikely yearning to share.
Is there a way to disconnect from iCloud without retiring my Mac machinery?
I there a way to look into my little section of the cloud and make sure it empty?
